Chicken Blueberry Spinach Salad with Parmesan Cheese

To make this delicious salad that serves 2 all you need is:

  • 240g chicken breast
  • 6 cups baby spinach
  • 2 thin slices red onion
  • 60g blueberries
  • Small handful toasted almonds
  • 25g shaved Parmesan cheese

And this is what you need to make the Balsamic Dressing:

  • 1/4 cup olive oil
  • 1 tbsp balsamic vinegar
  • 1 tbsp red wine vinegar
  • 1 tbsp water
  • 1/2 tsp Dijon mustard
  • 1 pinch each salt and pepper

Grill the chicken, cut into small pieces.

While the chicken cooks, divide and arrange the rest of the salad ingredients onto 2 serving plates.

Add the Balsamic Dressing ingredients together and blend with a stick blender (or bullet).

Top the chicken onto the salad and add the dressing.
