- 240g chicken breast
- 6 cups baby spinach
- 2 thin slices red onion
- 60g blueberries
- Small handful toasted almonds
- 25g shaved Parmesan cheese
And this is what you need to make the Balsamic Dressing:
- 1/4 cup olive oil
- 1 tbsp balsamic vinegar
- 1 tbsp red wine vinegar
- 1 tbsp water
- 1/2 tsp Dijon mustard
